Quick question, I see the lead plane, as well as the lead Polish plane, have a something white above the pilot's head, as if there's some sort of curtain. What is that?

If I had to guess, it looks like an instrument hood. The user pulls it, much like the sun hood on a baby stroller, over their head, which blocks out the outside view while allowing full access inside the cockpit. Though I'm not positive, because in U.S. planes it's exclusively in the rear cockpit, providing unobstructed vision for the non-flying (safety) pilot in the front seat.

@Taylor Jones - This is a curtain indeed. It is used when the pilot in the front seat is flying using the instruments in the cockpit without seeing what is happening outside thus simulating flying in the night.
